I'm trying out RUMLogNG, and it seems to work pretty much as I would like and am getting used to it.
One question I have concerns the "Color" field for QSO entry. I see how to set it, but I do not see how I could edit it later. The documentation mentions being able to change the color at a later date, so I'm sure I'm missing something easy. A pointer in the right direction would be appreciated.

Select the QSOs in question and select Menu-->QSO-->Color code

I knew the problem had to be on my end - and I'd even seen that page! I'll blame it on trying to read software documentation at 3am!

I'm running NG V3.0 under Sierra (very nicely, thank you) and decided to play with the color-coding feature.
I have two QTHs, one in North Carolina where I spend my summers, and the rest of the time in south Florida.
Up until now, I have kept separate .rlog files for each QTH, but that makes it difficult for me to properly track my DXCC progress, for example, but is handy for tracking Worked All States.
I created a separate subdirectory for testing and used copies of my working .rlog files to create a pair of .adif files, which I then imported into one new .rlog file. I then manually applied colors to designate which QSOs were made from NC and which were made from Florida, and that seemed to work fine.
But, and perhaps this is a "feature request", I can't seem to perform color-based searches. That is, I can go to the Color Code selector in the bottom tray of the main log window and change it from "All" to "Yellow" (Florida) or "Green" (NC), and the QSO log file display will change correctly. Searches that I perform from the search criteria using the bottom tray selectors seem to work correctly. But, when I go to the top tool bar to Window -> Search QSOs, which brings up a separate window entitled "Search for QSOs", I can't figure out how to use color as one of my search criteria. That method appears to look at the entire log file, regardless of color, even if I use the bottom tray color selector just before invoking the "Search for QSOs" window. For example, how would I find all the DL's I've worked from NC who haven't confirmed via LotW?
I'd also like to be able to re-split my log and use something like Logbook -> Export all QSOs as ADIF but with selection criteria such as color enabled. Luckily, my "color scheme" is such that my QSOs from one QTH or the other occur in large blocks of time and dozens of QSOs, so it's still possible to sort them manually, but with about 2300 QSOs in the combined log, I'd rather do it with some selection tools.

I may add the Color search in the next version, I put it on my list.
You should consider to use a User field and map it to <MY_GRIDSQUARE> or to <MY_STATE>
